Its the season of sharing cookies and fudge and candy canes and you’re probably thinking, Shelley why are you talking about WHITE vegetables at a time like this?
Well its also the time of year for sharing coughs, viruses and the flu and WHITES are really important players in keeping our immune system in top shape
Polysaccharides ~found in mushrooms like shiitake and oyster mushrooms are the real deal
-in simple terms they actually give your immune system a bit of a workout – making it stronger and more effective at responding to viruses and infections. 💪🏼 (drop and give me 40 soldier!!)
Onions and garlic are also big immune boosting, viral fighting foods and leeks are also a fantastic pre-biotic (meaning it acts as food for the good bacteria in your gut).
With a little thought, it can be really easy to add more of these WHITES to your weekly menu – mushrooms, onions, garlic & leeks are easy to saute’ and add to sauces, stir fries, soups and so many other dishes.
For Thanksgiving this year we made an awesome Mushroom Stuffing.
Oh it was good!
And so delightful to use as leftovers on eggs, sweet potatoes and more in the days after the holiday.
Adding some of our favorite culinary herbs not only boosted the flavor but also boosted the nutrition (sage, thyme & rosemary)
