Oxymel means “acid and honey” and is a common way to preserve herbs for use medicinally.

I’ve found that filling a jar half full of berries and using a blend of equal parts vinegar and honey to fill up the rest of the bottle makes a really lovely end product.

Make sure to seal the bottle tightly and allow the herbs, vinegar and honey to infuse in a cool, dark place for 2-4 weeks. Strain. preserve the honey/vinegar mixture in a tightly closed glass jar. ❤️


Oxymels have a long shelf life and are a wonderful way to add a sweet and tart herbal boost to drinks (especially tea). (I need to get another batch started!) ❤️❤️❤️
